Thanks to the 2011 merger with the Latteria sociale Giardina di Arceto di Scandiano (in Reggio Emilia), we became a complete manufacturer and are able to offer the prized "Red Cow” Parmigiano Reggiano.

Parmigiano Reggiano Red Cows - parmesan red cowsThe Reggiana’s Red Cow is a long living, robust and efficient bovine: it is very fertile and is resistant to diseases.

It’s a native breed from Northern Italy and compared to average cows, it is larger and produces less milk, around one third less than the Friesian breed.

The breed was on the brink of extinction due to its low milk productivity, but thanks to a group of breeders in the Reggio Emilia province, this danger no longer exists.

The milk from these cows is particularly rich in fats and contains the casein protein that is extremely important in the process of transforming milk into cheese. It is also particularly indicated for long ageing.

From this special milk, you can obtain a very prized Parmigiano Reggiano. It has a highly nutritional value due to the higher level of fatty acids.

This kind of Parmesan isn’t white; it has a characteristic, yellow, straw color that comes from the diet that the cows follow. The Reggiana’s cows are exclusively fed grass, hay and cereals.

It is full of flavor but it isn’t spicy. It is finely granulated and has a flaky scale thanks to the 24 month ageing.

In order for a Red Cow Parmigiano Reggiano to get its name, it has to be aged for at least 2 years!

The long resting period improves its digestibility and allows it to become enriched with Calcium phosphorus and protein: For this reason it is suitable for infants, children, adults, athletes and women who need a higher calcium intake ... In other words, for everyone!

Red Cow Parmigiano Reggiano can be enjoyed in every kind of gastronomic preparation: in flakes with Balsamic Vinegar from Modena, grated over pasta dishes or placed into various recipes to give some flavor. Lambrusco is the traditional wine that accompanies the cheese, but it can be paired quite easily with structured red wines or sweet wines.

You can verify the authenticity of the cheese because "Vacche Rosse - razza reggiana", is fire branded on every single part of the rind. If you do not see these markings, the Parmigiano Reggiano doesn’t come from the Red Cows.
