With its dark, brown colour, Aceto Balsamico Tradizionale di Modena DOP owns a balanced sweet to sour flavour. Its basic ingredients are locally grown grapes, such as Trebbiano, Lambrusco, Spergola and Berzemino.

Vinegar is the result of must being cooked on fire in uncovered cauldrons until natural fermentation and acidification are accomplished. After cooking, the product is carefully poured from cask to cask where Aceto Balsamico Tradizionale di Modena DOP starts its long and slow ageing process. In compliance with the Certification Board and the Commission of Expert Tasters, vinegar aged 12 years or more is branded “Affinato” (refined), from 25 years up it becomes “Extravecchio” (extra-old).

This product is famously combined with Parmigiano Reggiano DOP, but is also right with EVO oil, to dress green salads, or as after-dinner digestive. It goes on roasted and boiled meat, too.
