There are various ages of maturation of Parmigiano Reggiano: 12 months, 18 months, 24 months, 30 months, 36 months, which are always stocked. Extra-aged, over 75-month-long maturation is also periodically available.

Since the 2011 incorporation made with "Latteria Sociale" Giardina, a dairy located in Arceto near Scandiano (Reggio Emilia), we have also entirely produced the renowned "Parmigiano Reggiano Vacche Rosse” (Red Cows). Parmigiano Reggiano "Red Cows" is very tasty thought not spicy and features a grainy and crumbly texture resulting from 24 month-long minimum maturation.

Our cheese factory

At 4 Madonne Caseificio dell'Emilia we always commit to tradition, history and our local territory. Our cheese factory belongs to the Consortium of Parmigiano Reggiano and produces a hard cheese with a typical "grainy-like" texture in compliance with PDO brand regulations.

Parmigiano Reggiano has a precise and limited production area in order to safeguard its identity. The place of origin includes the areas of Parma, Reggio Emilia, Modena, Bologna (on the left side of the river Reno) and Mantua (on the right side of the river Po).

Our products are on sale in our stores in Lesignana di Modena, Sorbara, Solara, San Prospero, Carpi, Sassuolo, Correggio, Bagno di Reggio Emilia and Monchio di Palagano, as well on our e-shop!
