Parmigiano Reggiano 30 months has a bright straw yellow colour and a sophisticated flavour of spices, nuts and hay. Its grainy texture clearly reveals tyrosine crystals.
How to taste it
This naturally lactose-free cheese can be cut into irregular pieces and served with thinly sliced raw fish or meat. The crust, once carefully cleaned, can be heated on grill and diced into an informal, delicious appetizer.
