Why visit our cheese dairy
For over a decade, we have been hosting tourists and visitors from around Italy and the world, with an average of 20,000 guests each year. Despite the pause between 2020 and 2021 due to the pandemic lockdown, the fascination with the story of Parmigiano Reggiano has continued to grow.
Visiting our dairy provides a rare opportunity to see firsthand how milk is transformed into the renowned Parmigiano Reggiano cheese, through every stage of production. This authentic experience offers a deep and lasting connection to the rich tradition and craftsmanship behind our world-famous cheese.
Where the tours take place
Our guided tours take place at our cheese plant located at Strada Lesignana 130 in Lesignana di Modena. It is just 2 km from the Campogalliano exit on the A22 Brenner Motorway.
The facility offers large free parking for cars, buses, minivans, and camper vans. There is also an electric vehicle charging station available for our guests.
The reception area is easily accessible from the parking lot, and the tour starts from there. The cheese plant is fully wheelchair accessible and family-friendly, accommodating visitors with strollers.
How the tour unfolds
Welcome
Upon arrival, check in at the welcome desk where you’ll receive all the essential information for your tour.
A historical overview
The tour begins with a brief introduction to Parmigiano Reggiano, with origins dating back nine centuries, and the story of 4 Madonne Caseificio dell'Emilia, established in 1967.
Processing and shaping
Walk through the corridors and watch through large windows as milk is poured into copper vats. Here, every morning, the cheesemaker and their team skillfully shape the Parmigiano Reggiano, letting visitors witness the creation of this renowned cheese.
Pre-salting and brining
After processing, the cheese is wrapped in linen cloth and shaped in Teflon moulds, where it receives its initial marks. It is then transferred to stainless steel moulds and submerged in a large brine tank, where it will remain for about 20 days.
Aging warehouse
Next, visit the aging warehouse, where around 33,000 wheels of Parmigiano Reggiano are stored. Experience the rich aroma of the mature cheese and immerse yourself in its sensory delights.
Tasting and Shopping
The tour concludes with a tasting of various Parmigiano Reggiano ages, paired with local specialties. You can also shop for our products at the store, which is always open during the tours.
