The maturation of this Parmigiano Reggiano started over 40 months ago, that's why it is called "extra-aged". This very long ageing has increased its flavour and made it even more grainy, releasing a unique and persistent aroma.
How to taste it
Parmigiano Reggiano aged 40 months has a dry, grainy and crumbly texture and it is therefore easy to grate or to cut into irregular portions. It will surely add flavour to all recipes. It is also preferred before or after dinner and, possibly, paired with thick drops of honey or Balsamic Vinegar.
This type of cheese is also naturally lactose-free and highly digestible.
