Parmigiano Reggiano aged 18 months

Parmigiano Reggiano PDO aged over 18 months has a pale straw yellow colour, it is regularly grainy and fairly compact. It reveals a flavour of yogurt and cooked vegetables. It has a well-marked lactic base to the taste, with evident granularity and friability. Its texture is still soft and gently releases a delicate aroma.

How to taste it

You can enjoy this naturally lactose-free cheese with fresh vegetables or with fresh fruit as a mid-afternoon snack for your kids. Eat it alone, while sipping a glass of white wine or pair it with a mildly spicy Italian mostarda. The crust, after being carefully cleaned and cut into small pieces, can be cooked in tomato sauce to increse its flavour.
