Parmigiano Reggiano "Red Cows" aged over 24 months is made with milk from a particular cow breed called Reggiana Breed. Thanks to fresh grass based cow feeding, the resulting cheese features an intesive, straw yellow colour, together with exceptional nutritional properties and a unique flavour.
This type of Parmigiano Reggiano is very tasty, not spicy at all, features a fine grain, easy to cuto into flakes as a consequence of a 24 month-long maturation, which is, by regulation, the minimum time period it must be aged until it becomes "Red Cows" stamped!
How to taste it
Flaked or chopped Parmigiano Reggiano "Red Cows" is a delicious ingredient for mixed salads and perfectly pairs with fresh fruit, as well. Try it with other traditional food products from Modena, such as aged Balsamic Vinegar or dried fruit, like plums or figs. Parmigiano Reggiano "Red Cows" suits medium-structure red wines as traditional, locally made Lambrusco. It is also recommended with high-structure wines or passito white wines such as Albana.
