Why visit our Parmigiano Reggiano dairy

For over a decade, we have been welcoming visitors from around the world. Today, more than 25,000 people join us every year — a clear sign of how much Parmigiano Reggiano is loved globally.

Over time, we’ve grown across our territory, expanding both our production sites and retail stores. And now, the experience becomes even richer: alongside our facility in Lesignana (Modena), you can also visit our dairy in Baggiovara (Modena).

Stepping into the places where Parmigiano Reggiano is made means entering the very heart of the process. You’ll witness every stage up close — from fresh milk processing to the finished wheel — all the way through aging, when each wheel develops its own distinctive aroma, texture, and character.

This journey engages all your senses: from the skilled hands of our cheesemakers to the scent of freshly processed milk, all the way to discovering a product that comes to life before your eyes, day after day.

An authentic experience that reveals what truly makes Parmigiano Reggiano unique: its people, its land, and its tradition.

What you will see during the tour

Welcome & check-in

Upon arrival, you will check in at the reception area, where you will receive all the information you need for your visit.

A brief historical & geographical introduction

The tour begins with a short introduction to the origins of Parmigiano Reggiano — a story spanning over nine centuries and rooted in the Protected Designation of Origin (PDO) area, which includes several provinces of Emilia and extends into part of southern Lombardy.

Milk processing & cheese making

During the tour, you will observe the milk processing stage, when fresh milk is poured into large copper vats every morning. This is where Parmigiano Reggiano takes shape: each vat produces two wheels, expertly lifted by the cheesemaker and their team.

Pre-brining & brining

The tour continues through the areas dedicated to the salting process, a crucial step in developing the cheese’s structure and flavour. Here, the wheels are immersed in brine solutions for carefully controlled periods.

Aging warehouse

You will then enter the aging warehouse, where thousands of Parmigiano Reggiano wheels are stored. A striking environment where time, silence, and the aroma of the cheese tell an essential part of the production story.

Tasting & shopping

The tour concludes with a tasting of different aging stages of Parmigiano Reggiano, paired with selected local specialties.

You will also have the opportunity to purchase products at the adjacent shop, which is always open during visiting hours.
