Parmigiano Reggiano PDO aged 12 months is a a mild tasting cheese with a scent of fresh milk and grass. Its pale straw yellow colour and low granularity, makes it perfect with strawberry preserve and balsamic vinegar.
The minimum maturation age needed to officialy become Parmigiano Reggiano amounts to 12 months. Experts call it "new", due to its tender texture.
How to taste it
You can enjoy this type of Parmigiano Reggiano as an appetizer or a snack toghether with a glass of Lambrusco or dry white wine. Parmigiano Reggiano is naturally lactose-free, therefore recommended for children. Once its crust is carefully cleaned, it can be grilled and melted into a creamy and stringy spread on bread.
