In our factory located in Varana di Serramazzoni, in the mountains near Modena, we daily make 22 wheels of a special type of Parmigiano Reggiano branded “Prodotto di Montagna” (Parmigiano Reggiano from mountain farms), 12 of which are also entitled to be branded Parmigiano Reggiano Biologico (organic type), too.
On a national level, Emilia Romagna is a leading player in organic farming.
Parmigiano Reggiano Biologico, (organic type) complies with strict regulations issued by “Consorzio del Parmigiano Reggiano”, meant to preserve traditions, quality and meet requirements relating to GMO-free nutrition of dairy cows and their wellbeing.
In our site located in Varana di Serramazzoni, milk used for organic type Parmigiano Reggiano is separately processed, from collection, to vats where evening milk is skimmed, across the whole process into cheese, to brine vats until it is finally stored and cured in the warehouse on dedicated shelves.
4 Madonne Caseificio dell’Emilia offers two different ages of Parmigiano Reggiano Biologico:
- PARMIGIANO REGGIANO BIOLOGICO 18 MONTHS OLD
- PARMIGIANO REGGIANO BIOLOGICO 24 MONTHS OLD
The organoleptic traits in it are not that different to traditional Parmigiano Reggiano, but benefit from the “organic” added value.
